The EGT is a cockpit indicator for fuel flow since the fuel burned in the combustor determines the turbine entry temperature, which cannot be reliably measured, and EGT is a suitable alternative. Any deterioration from the engine as-new condition will require more fuel, resulting in higher temperature gas, to produce the thrust.
MAP sensors measure absolute pressure. Boost sensors or gauges measure the amount of pressure above a set absolute pressure. That set absolute pressure is usually 100 kPa. This is commonly referred to as gauge pressure. Boost pressure is relative to absolute pressure - as one increases or decreases, so does the other.
However, once water boils, it is an insulator, leading to a sudden loss of cooling where steam bubbles form. Steam may return to water as it mixes with other coolant, so an engine temperature gauge can indicate an acceptable temperature even though local temperatures are high enough that damage is being done. An engine needs different temperatures.
