If you want a high mirrored finished edge, then a Lansky probably isn't what you want. If you want to keep a good hair popping, working edge, the Lansky would work. My best kitchen knives are Wusthof, Henckels and old Chicago Cutlery (when they made good knives). Cutting bevels or blade angles range from 14 degrees to 20 degrees or thereabouts. My collection runs the gamut from small pairing knives with blades around 2 to 3 inches long, to carving knives with blades from about 10 to 11 inches long.
1. Some say the KME can't sharpening full flat grinds and distal taper knives because you can't get them clamped tight enough. That's complete and total nonsense and utterly untrue. The overwhelming majority of my modern folders are Spyderco FFG's and I have ZERO issues.
191. Dec 1, 2015. #6. The Spyderco Sharpmaker and Lansky Deluxe 5-Stone sets are both good basic sets that offer guided angle to sharpen at the same angle consistently, and multiple grits, though the Sharpmaker only comes with two initially.
I prefer 2-3K grit for kitchen knives though. For a one stone system a few options I would recommend: Shapton Pro or Glass 1000 or even a Glass 500; any of the Naniwa Pro/Gouken Arata/Chosera 400, 600, or 800; Suehiro Cerax 1000; King Neo 800; Norton India Coarse/Fine combo to name a few.

These are expensive, and available occasionally from Japanese Knife Imports (800 grit), and available (very occasionally, and only if you sign up for email and act quickly when it arrives), from Triple B Handmade (400, 1000, 3000 grit). The NSK stones come close.
The best sharpening system is the one that works best for you. Having said that, the Apex Edgepro is certainly one of the better systems out there. Easy to learn, easy to reprofile and easy to get shaving sharp edges on just about any knife.

The WEN is obviously an imported product made on the cheap. Your fit and finish will be lower for sure on the WEN, however, functionally you can get some pretty darn good results if you're willing to be patient. Many of the tormek Jigs do work on this machine. Last edited: Oct 26, 2019.
Most recently, I've purchased the KME Precision Knife Sharpening System. I have all of the diamond stones and a couple of the strops and CBN emulsions. I bought some various attachments: pen knife jaws, Hewlett JewelStik, and convexing guide rod. I found the KME sharpener very easy to use after practicing on a few Chinese CRKT and Kershaws.
