Don DeFore and Whitney Blake didn't quit -- they were dropped from the show to save money (as you guessed). It wasn't uncommon for successful shows to drop cast members back in the 50s and 60s in order to cut the budget (for example, "Mr. Ed", "The Lucy Show", "77 Sunset Strip"). Don DeFore was interviewed for the book "Written Out of ...
She didn't steal the show, it was her show to begin with, the show's name is Hazel, and the show revolved around that character. "Shirley Booth was a comic genius". Shirley Booth was an outstanding talent, one of the most talented actresses of all time, she won an Oscar for a dramatic role, a Tony for a dramatic role, she appeared in musicals ...
No Cathy Lewis bit the dust too. Died in 1968, as I remember it, of cancer. Same with Mr. Griffin he also died in 1968. The whole cast seemed to die quickly after the show ended. But Shirley Booth, Don DeFore, & Whitney did live a long time afterward. Ray Fulmer and Lynn Borden are still kicking. _____

So these episodes I'm watching now are a first for me. Just finished the 6th one. I've read that Shirley Booth's health wasn't so great the final year of 1965-66.

Not exactly the producers' preference. Look at the "Hazel" cartoons in The Saturday Evening Post and you'll notice each of the main characters in the TV show has a certain resemblance to their Ted Key counterparts. Hazel could translate easily to Shirley Booth; Mr. B., Don DeFore; Dorothy, Whitney Blake, and so on.
There probably should have been 30 episodes in the last season but they ended up making only 29. Another unusual thing is the show switched to color episodes three seasons early. Hazel must have had a high budget to allow approval for color episodes starting with the 1962-63 season. Realistically, the only season of Hazel that should have been ...
