The 97 anime is the most faithful adaptation and covers the golden age arc. I wholeheartedly recommend watching it. It is also how I was introduced to Berserk. The movies are pretty alright and have some cool fight scenes (especially the later ones) but obviously lack some very important things because of the runtime. They also cover golden age.
The 2016 and 2017 anime has TERRIBLE ANIMATION, TERRIBLE ARTSYLE. ITS A DISGRACE. But the story is still faithful to Manga and good. Also, some of the soundtrack is also good. If you end up becoming a berserk fan, you got to watch these anime after you are done reading the Manga. 2.

I think it's the closest we will get to a "worthy" Berserk anime, at least for a while. The voice acting, art style, sound design, OST. Stunning, i just wish it would have continued. In fact, i would be really happy just watching the Berserk 2016 and 2017 but re-done in the way the 1997 Berserk was made. I love it.
Google says you start at chapter 250 after the 2017 anime. I personally only read the manga but I know that the 2016/2017 anime skipped quite a few scenes and even one character super important to the story. The manga is absolutely the best way to experience the entire story. The '97 anime is probably the best adaptation we have though but it doesn't cover everything, same goes for the golden age movies and the memorial edition. Avoid the 2016/17 anime like the plague unless you REALLY want to see some later Berserk animated.
So, watch either the '97 anime or the movie trilogy as a great introduction to Berserk, but then start the manga from the beginning to get the real story. The last Berserk anime was just so baffling, I remember being confused by how a well respected series like Berserk could end up with such a terrible adaptation. Popular manga usually get at least adequate adaptations but I was literally offended by how bad this last one was, like it actually made me angry.
The fact that they caught up to the source material isn't the reason why the anime was left on the cliffhanger, since they skipped a lot of stuff such as the whole first arc and many characters.
