    The hot elements are pureed into a green hot sauce, and the rest are pureed for the soupy sauce, or the taquito filling. At serving time, the hamburger and onion are used as taquito filling. The crispy taquitos are then covered with the soupy sauce and layered in my special 4-cheese Mexican cheese combo.

    Trying out low and slow on my new Slow N Sear Kettle. Using a 2F Farms Akaushi brisket clocking in at 9lbs and probably 8.5lbs trimmed. Pit is holding steady around 245F. Spritzing with 50/50 ACV and apple juice. Post oak wood chunks and Weber charcoal. Looking and smelling great so far.

    We made our first stab at ravioli last week. No pic. I made a filling with ricotta, egg, spinach, garlic, Parmesan, sun-dried tomato, and toasted almonds. It was excellent, although next time we’ll try to get the pasta thinner. I’d have liked to have made a sauce, but after the hassle of making the ravioli, I copped out and used Rao’s.
