GBP: Entrenchment speed and daily command power gain don't affect combat performance, but the rest of the first three doctrines are very good combat buffs. Max entrenchment +10 translates into a 20% attack and defense boost in combat when at full entrenchment.
Right side grand battleplan is the best offensive infantry doctrine (Japan, China, India). Left side Grand battle plan is the most general doctrine as planning and entrenchment helps everything. Britain and France use this well as does Germany with its planning speed boost.

WHich is not infiltration. Both of the moblity doctrines are better. And I would go with blitzkrieg, as they are the most powerful early. Depends on if you wish to extend the Maginot line to the sea. Looking quickly over doctrines, some unintuitive things to realize: 1) Mobile warfare: tank focused doctrine. Probably the most versatile path there is, especially for a 2nd rate power. Surprisingly, I would argue it's the best doctrine there is for defensive warfare for a country that can afford its own tanks.
I think the "easy way" is to go to /scenarios/1936/ita.inc file and change the techs they start with or remove some (this will change it for the 1936 scenario.) Go to the land doctrine tree, click on the doctrine that you already have that's mutually exclusive with the one you want, and then click the "abandon doctrine" button.
The AI seems most likely to take this doctrine - especially AI Spain. Giving a starting bonus of a bunch of planning speed, some movement bonuses and Tank breakthrough, the Mobile Warfare doctrine focuses heavily on buffing Motorised and Mechanised Infantry, and, to the same or lesser extent depending on which branch you take, Tanks.
Every military national focus of Italy is useful. The only one I find useful is "Italy first" for the 120 political points but you need to spend around 140-210 days on it. Even the albanese reclamation is not worth it. For 25pp you can fabricate your own claim on them and save 140 days of focus.
Secondly, while the doctrine unlocks armoured divisions early, your tech is liable to lag behind, making many of your armoured divisions obsolete by the time the war starts. In that context, the mobile doctrine would probably be best served via an early war in 39 the moment the decision Alsace or War is available rather than waiting for 1940.
