Another reason is that in the larger scam groups (south east Asia) the scammers are partitioned into groups like a company. Some make initial contact with victim, some handle IT, some process payments/crypto, etc. The senior scammers are the ones that converse on WhatsApp/Telegram. Those are the monetary reasons.
If they're asking you to move to Telegram, they're trying to scam you. Absolutely. And as xcaliblur2 said, how to do you even know they're actually representatives of that company? They move to Telegram, because they're anonymous, i.e., not representing anyone including themselves.
I got a similar thing from Umicore. I stopped when they asked me what bank I used. I said I wasn't comfortable answering and then the telegram chat went silent for 6 minutes. I checked Upwork and the job was gone. I left and deleted the telegram app. SCAM probably. Annoying most definitely. Took about 45 mins of my life!
The only time Telegram Messenger will "rat" you out is if there are multiple court-ordered warrants and even then, there's no guarantee that the data they will be able to provide will be usable due to the fact that Telegram barely keeps any meta data, which is what I love about the app. Any messenger platform can be used by scammers.

If they send scam messages on the dating app, the dating app can detect the language / scripts that are typically used to scam people and ban the scammer. But there’s no way for the dating app to see what the scammer is saying to you on WhatsApp. (Usually a crypto scam, catfishing scam, or blackmail scam).

Task scams involve a website or mobile app that claims you can earn money by completing easy tasks, such as watching a video, liking a post, or creating an order. The app will tell you that you can earn money for each task, but the catch is that you can only do a limited number of tasks without upgrading your account.

The reason I say make sure the client has PAID others in the past: There is also a known problem on UW of 'clients' getting 'verified payment methods' on their profile by using a stolen credit card or other 'sketchy' financial instrument .
