Al pastor (from Spanish, "herdsman style"), tacos al pastor, or tacos de trompo is a preparation of spit-grilled slices of pork originating in the Central Mexican region of Puebla and Mexico City, where they remain most prominent; today, though, it is a common menu item found in taquerías throughout Mexico.
Three varieties of taco (clockwise from left): carnitas, carne asada, and al pastor. As is traditional, they are garnished simply with cilantro (fresh coriander) and chopped onion, and served with lime on the side for seasoning according to the diner's taste.

Carnitas, literally meaning "little meats", in Mexican cuisine, is a dish made by braising, simmering and frying pork in its own fat, lard or cooking oil. The name “ Carnitas ” is, historically, the colloquial name given in Mexico for the French dish Rillons de Tours also known in Spanish as Chicharrón de Tours .
Carnitas is pork cooked in lard flavored with orange rind. It was originally a specialty of Michoacán and Jalisco, but now can be found in most of the center of the country and in other parts of the country as well. The best-known grilled taco is carne asada (grilled meat) which originated in Sonora.
