Potatoes are cheap, so make plenty. There are about ten pretty decent sized potatoes in a 5# bag, and as a part of a meal, a whole potato is quite a bit. A pound should easily serve one adult and one kid, so 15 pounds ought to do it, with a couple more tossed in for good measure.
Now you got me thinking. I think I'll try a couple potatoes and some really juicy cut of beef ribeye, all in the crockpot. Yes, directly on the potatoes. I don't know cooking times right offhand, but I'd imagine at least 4-5 hours or more on low heat would cook everything thoroughly.
Yep, potatoes definitely hate being exposed to air. However, I quarter them and toss them into a pot of cold water. Then I boil them by bringing the temperature up from cold. I drain the potatoes then I fill the pot with cold water, which firms-up the potatoes. From this pot, I take the quartered potatoes, peel with a spoon, and dice them.
Those being expensive meat based dishes were not eaten every day by average people. Mostly it was a lot of tea and various baked goods as filling inexpensive food, a lot of fresh fruit like apricots, melons, watermelons, grapes and nuts. Though other Central Asian countries all have similar recipes.
I am sure some people with type-2-diabetes may very well do great eating potatoes, and other type-2-diabetics will do very poorly getting such a big dose of carbs. I am not a diabetic, but I am pretty sure I have a significant case of insulin-resistance. Potatoes for me are an overall negative, making my energy seriously slump soon after eating ...
LOL !! Potato salad is named incorrectly. Should be called relished potatoes or some such thing. LOL Potatoes wouldn't go in a salad. I love potatoes with butter and sour cream, chives, and bacon bits sometimes. When I sort potatoes, I use the bigger ones for baking and save the smaller ones for boiling. Another suggestion would be to use waxier potatoes like Yukon gold. 12-05-2012, 12:44 AM
I've been buying canned Yams/sweet potatoes at the supermarket for awhile now and the cans actually say 'Yams' and 'Sweet Potatoes' too. So until just now I thought they were the same thing until reading that orange sweet potatoes are more healthy than yams and that they are indeed different. Please help clear up this confusion. Thanks!
Nothing could be easier....peel potatoes first it's not hard. 1/2 or 1/4 them and throw in boiling water lightly salted if you like. Boil until a knife test shows they are as cooked as you like. You don't want potatoes to be mush for potato salad but I hate undercooked potatoes. Nothing wrong with baked potatoes either (or microwaved).
