Koteletts (Fr. côtelette „chop“, from Fr. côte resp. Lat. costa „rib“), also known as Karree, Karbonade [1] or cutlets, are a German meat dish made of slices of meat from the rib area, including the bone. The piece of rib is found on both sides of the spine behind the neck.
The preparation method is usually attributed to Darya Pozharskaya, the daughter of Yevdokim. Several legends appeared about the origin of this dish. According to one legend, the recipe was given to the Pozharskys by a poor French traveller as payment for the accommodation. [1] [2] [10] Initially the patties were made of ground beef or veal.
In some recipes, the patties are covered with bread crumbs. In Ukrainian cuisine, a breaded variety called sichenyk ( січеник ) is made of minced meat or fish and vegetables.
