I went to the web and found a recipe from Zatarain's here and apparently they don't mix meat and seafood separating the two, "Gumbo is a savory Cajun or Creole stew served with or over rice. Just add one pound of seafood (shrimp, crabs, or crawfish) or meat (chicken and sausage are very popular) for delicious nine cups gumbo in about 30 minutes.".
