Bullheads are very good from cold water (northern rivers where the water temp never gets above 70 deg). As said before, small is better, 1#-2# are the best eating. Bon Appetit! Reply Like.
My favorite to eat is the channel cat caught from swift moving water over a rocky bottom like the Susky. Next is the flathead followed by the blue cat. Bullheads caught in freshwater are also good but they're usually smaller 12" - 14" seems to be the norm and I just skin and gut them and fry 'um up like bluegills.

The bigger and older they get, the more toxins they collect. Second, the meat starts to get mushy as they get bigger. The small 2-5 pound fish taste the best to me, and I let the big ones go.
Choptank river MONSTER catfish. Just want to say that the Choptank around the area of Denton Maryland is a great winter spot for cats, big blue cats in particular. I primarily use night-crawlers as I don't like missing out on nice white and yeller' perch. Best tide is a fresh outgoing, and a double hook set up.
I've used the saltwater types of Gulp & Gulp Alive in freshwater, so see no reason not to use Fishbites. The only way to find out will be to try it. I think catfish will bite anything with scent personally. we catfish alot here. channels and flatheads. flatheads like live bait up here. gills. but channel cats if it smells thy are on it I think ...

5819 posts · Joined 2008. #5 · Feb 9, 2009. Naw, they're fine. Every now and then when I take someone after freshwater catfish they say they're poisonous. It hurts if you get stuck by the fins, but no more so then getting stuck by something of the same size, IMO. Reply Like.
