    A little follow up. Got my walk in cooler up and running finally. I had my 4' x 8' x 7' space within my shop with 2 x 4 walls sprayed with closed cell...about 2". Installed 2" foam board over all surfaces to include the slab. Purchased a 12000 btu a/c unit and hooked up the coolbot. Works like a charm.

Put in the quarters, nailed it shut and the dry ice was almost untouched the whole 30 hour drive from Colorado to Pennsylvania. Cost $80ish to make, is 4' by 4'.

    Toss the quarters, backstraps, etc, in a cooler with ice, drain and add ice as needed. In about 2 days the temps will stabilize and the ice will stop melting. The muscle that is in contact with the water will leach some blood but nothing else will happen to it. Once home, cut it up as usual. Been doing it for years.

    I think you have the right idea with bringing the freezer along. Get the meat half froze, then pack in coolers with dry ice, and you should be good to go. That way you only have to run the freezer for a little while. Dry ice is not tough to work with. Just read up on the process in advance so you don’t burn yourself.
