Horchata (/ ɔːr ˈ tʃ ɑː t ə /; Spanish: [oɾˈtʃata] ⓘ), or orxata (Valencian: [oɾˈtʃata]), is a name given to various beverages, which are generally plant based, but sometimes contain milk. [1] [2] [3] In Spain, it is made with soaked, ground, and sweetened tiger nuts.
The aroma is often compared to that of almonds or almond extract. Pixtle is traditionally used in tejate, a pre-Hispanic beverage that contains ingredients such as roasted corn flour, fermented cacao beans, and rosita de cacao. Tejate is still sold in local markets and served at festivals across Mexico.
