The ! indicates cells that are header cells. In order for a table to be sortable, the first row(s) of a table need to be entirely made up out of these header cells. You can learn more about the basic table syntax by taking the Introduction to tables for source editing.
Launch the visual editor. In the column you are copying click the header cell or whatever top cell you want. Then shift-click a cell farther down or at the end of the column. This will select the column down to that cell. Then click "copy" from the edit menu of your browser (or Ctrl+C). In some browsers you can do this from the popup context menu.

Unfortunately, the ability to sort by "From," "Subject," or "Date" is no longer supported if you use the New/Old style of inbox. If you want to sort your messages this way, switch to the Unified Inbox style.
