The good news is you don't have to go deep into the snow biome to get the pelt bearing animals, and you may be able to kite them to a warm spot for harvesting. Also, temperatures vary, so one day, it may just be too extremely cold to risk the snow, and then a day or two later, you will have no issues.
pelt is abundant in the snow biome from mammoths, wolves and rhinos or yutis. but freezing is a real problem there so scouring the edges is the best option. You can hervest small amounts from sheep, megaloceros, equus, beavers, megatherium or the kangaroo. which can be found in the redwoods.

So to get pelt in the snow, first I recommend to have some point in fortitude and be able to create the fria curry. With 20 in fortitude, fria cury and hide armor, I was only cold. * The easy way: you need a argentavis (saddle at level 55). You pick wolf or megaloceros and kill them in fly, then land to collect the pelt.
