    After some more reading and a little experimentation, I took some wood chips and ran them through an old blender, which made a lot of small splintered wood bits. Looks like the longer the blender goes, the finer the wood is ground. The closest grocery didn't have any potato starch, but I found some gluten-free organic potato flour.

    My old smoker finally died after 25 years. It was an amazing smoker designed and built by a welder in Oklahoma (no longer making smokers). Used whole logs, not pellets, firebox underneath, not at the side, and an 8 gallon water pan. I have searched the Internet looking for a replacement and can't find anything but pellet smokers.

That being said I love my pellet smoker. That wood flavor and moist meat is top notch. Its just not even close to the smoke flavor the stick burner gives.

    Here is what I am thinking: 3' deep x 3' wide x 5' high smokehouse, pine or cedar 2x4 frame (untreated wood) with double walled construction with insulation in between (fiberglass, ceramic fiber, mineral wool, or sheep's wool), 1/2" cement board (Hardie Backer, other brands?) for reflecting heat, and high-temp silicone sealant for the inside seams.
