Moringa stenopetala, commonly known as the African Moringa or cabbage tree, is a deciduous tree in the plant genus Moringa, native to Kenya and Ethiopia. The trunk is grey, robust, and ringed with leaf scars; old leaves remain attached to the trunk for several years before falling cleanly. The leaves are fan-shaped, and 3 m (9.8 ft) long, with robust black teeth on the petiole margins. Like all Borassus species, B. flabellifer is dioecious with male and female flowers on separate plants.
The alternately arranged evergreen leaves are dark green above and paler on the undersides. The leaves have thin blades in moist habitat, and smaller, thicker blades in dry areas. The leaves are an ovate to elliptic shape with a normally waxy-white undercoating on the bottom. Top surface of the leaf is glabrous, or smooth without hair. [7]
The leaves are opposite, 7–12 cm (3– 4 + 1 ⁄ 2 in) long and 5–8 cm (2–3 in) wide, with a broad oval shape, pointy ends, serrated (saw-toothed) margins, and long leafstalks. The leaves are green with occasional touches of purple on the underside. [8] The flowers bloom on racemes at the end of branches and the main stalk in late summer.
An extract of its leaves is used as a food dye, and imparts a magenta tone to some Vietnamese foods, particularly in a taro-filled cake called bánh da lợn and glutinous rice dishes such as xôi lá cẩm, a sweet dessert.
