Adguard DNS is the best. This is an opinion not based in fact. The company uses misleading wording on the website to trick you into using their app for DNS which Only gives you a Trial of 14 days and 300K blocked requests a month. The app has been known to stop protection way before the 14 day trial or 300k requests a month are reached.
The downside of this was that some of the functionality was more limited, the upside is that you can use an ad blocker that can't see, view or read the web pages you visit or your browsing history. Over time, the Safari ad blockers have got a lot better and can now block all ads (including YouTube ads), trackers and other web page annoyances.
For Safari Magic Lasso Adblock is free, blocks ads and trackers and respects its user's privacy. It used to be #1, but issues cropped up.
