You can also catch the other two species the Northern and Southern in Florida as well and the Gulf can also be caught on the Atlantic side. They are very good to eat.

Catches of 2008. Pollacks eyes are set high in the head and appear to look upwards. Whiting have got razor sharp, glass-like tiny teeth and their bodies tend always to be the same whitish silver colouring whereas pollack take on the colour of their surroundings.

And like Surfchunker says, the heads make excellent bait for both Drum and Stripers! Kingfish also make a great target when you want to get some kids involved in fishing.

In reality, the vast majority of adult whitefish, be they cod, haddock, ling, pollack, whiting or saithe are liable to contain worms in the muscular flesh - what we call the fillet. The worms that matter are not in the guts. If the fish have intestinal nemotodes, they are removed on gutting, which should be done ASAP after capture.....
Fish often gather with others of a similar size / year class. Due to mortality, larger fish are fewer in number and as fish grow, their preditors become fewer and so larger fish (not just whiting) tend to be more solitary or hang round in smaller groups than juvenilles who rely upon 'safety in numbers' to maximise their chances of survival.
When the whiting pick up the bait they don't feel any weight and usually run with it to get away from the other fish hooking themselves. If your fishing from a pier you can actually just use enough split shot to get the bait down to them, about 1/4 oz. I prefer the #1 or #2 to the larger hooks.
