    As for using a pasta machine, many clayers use them for making sheets (and use multiple sheets if they need to be thicker than 1/8"), but others (especially those who don't have a pasta machine) may just use a hand roller--plus often "guide rails" on each side to get an even-thickness sheet. My pasta machine goes from 0-9. 0 is the thickest.
