Chapter 3 was the only one that was made, which you can find as "Oculus Chapter 3: The Man with a Plan". The short film served as the prototype for the full-length movie, but I don't think he has any plan to adapt any of the other chapters.
I suggest you can try out the quest 2 and the projector and return whichever you don't like as much (amazon returns are amazing). You could project to the ceiling if that's what you're worried about. The quest 2 is fantastic as a gaming device no doubt and I love it a lot, but if it's strictly for movies there are alternatives. Can't hurt to try.
I wish there would be because the ending really bummed me out. Plus the Rotten Tomatoes consensus spends most of its time talking up how it’s just the start of a franchise so it really got my hopes up. Great movie otherwise. Some of the best editing I’ve ever seen, would have given it an Oscar nomination for that.
Depends on what source the video is from, most of the time with 360 video even 8k content can look blurry. But if your watching content in something like bigscreen, virtual desktop, or the oculus dash the quality will be pretty good. (Can't say 100% as I don't own the quest 2, going based off general veteran knowledge)

This year I was one of many who bought an Oculus. (The Oculus Quest 2 to be specific.) While the promise of VR gaming was certainly appealing, what finally won me over was the ability to watch movies in a virtual movie theater. It has been a game changer for me. I'm excited about my new Quest 2 (Edit: not the "Qest 2") as more features will become natively unlocked for PC powered gaming: higher resolution, higher refresh rates, higher bitrates, wireless. But right now there is something you don't need to mod to have the full experience with, and that is watching 2D and 3D movies.
Default oculus browser has very low framerate and visual/audio hickups while playing from plex webapp. In firefox it plays properly but UI seems partially broken - some buttons don't work at first click (like play/pause) or at all.
