Get it wrong and cover a whole 13x9 pan of cube steak with scortched gravy is a cooking felony and sure to put you in the doghoise with a crowd of hangry folks.

Ladies and gentlemen, I need some cooking help. We’ve had about all the delicious grilled deer steak, roast, and chili we’ve wanted the past couple of years, praise the Lord, but we are wanting to expand the menu. I tried my hand at making country fried steak from cubed backstrap, but it was a little tough (maybe over fried) for backstrap.
You would not get the look and feel of cubed steak. Butchers also use the cuber to make two small pieces of meat into a patty. As far as cooking, the results would be the same -- a tough piece of meat is made more tender, and cooks quicker. There probably are advantages either way.
