You can create aliases in Gmail by adding a + after your user. Like usrname+randomsite@gmail.com. Then you can easily block mails when an alias is spammed. Unfortunately, a lot of web forms block you from using the “+” in an email address. Not that many in my experience, but yea, probably not a 100% solution.

Mailcow is a full suite for self-hosting email, CalDAV and CarDAV. It has built-in disposable address generator, too. You can just make up whatever email you wan't and check it at yopmail.com but anyone can check this email. For example go there and search the email "fuckyou@yopmail.com " and you will see emails for anyone who used that. Getnada.com. Just buy a domain for 8-10 bucks a year and forward all the emails to your Gmail.
