Clear finishes are intended to make wood look good and meet the demands to be placed on the finish. Choosing a clear finish for wood involves trade-offs between appearance, protection, durability, safety, requirements for cleaning, and ease of application. The following table compares the characteristics of different clear finishes.
The seasoned surface will deteriorate at the temperature where the coating breaks down. This is typically higher than the smoke point of the original oils and fats used to season the cookware. Thus old seasoning can be removed at a sufficiently high temperature (~500 °C), as found in oven self-cleaning cycles.
Like cast iron, carbon steel must be seasoned before use, usually by rubbing a fat or oil on the cooking surface and heating the cookware on the stovetop or in the oven. With proper use and care, seasoning oils polymerize on carbon steel to form a low-tack surface, well-suited to browning, Maillard reactions and easy release of fried foods.
Alternatively, one may also use a food-grade drying oil such as poppyseed oil, tung oil or linseed oil. The first two dry much faster than linseed.
