In American usage, a bain-marie is NOT a double boiler (I believe in the UK they are used interchangeably). A double-boiler is used on the stove to gently melt (for example, chocolate) or cook. You can purchase special nesting pots, but it works perfectly fine with a heat-proof bowel sitting over simmering (not boiling) water.
