Im actually playing a monk/barbarian right now i affectionally call the meat shield. I took the idea of being a wall of hit points and ran with it to ridiculous lengths. Hill Dwarf for CON and WIS to get multiclass bonusses and the extra hit point per level.
The Support Build: Ancestral Guardian Barbarian X + Celestial Warlock 3 For people who want to be angry but also want to help people. This is a great supportive build (as supportive as barbarians get, anyway) with multiple ways of reducing damage taken by allies and even healing while in rage with the Celestial patron's Healing Light feature.

With +5 DEX, the Fighter HP, Barbarian resistances and Bladesinger stuff, you have "enough" for tank. I'd consider moving the 20 in INT to STR or CON. Barbarian's extra damage only applies when swinging with STR, and the AC difference probably won't get you much.

Plain PAM GWM barbarian build, but with the Tail for extra defense to offset Reckless Attack and swim speed for those underwater combat sections. Personally, I think 2 is the more unique, given that 1 stops functioning at higher levels and is generally inferior to a Rune Knight, whereas 3 is just pretty much every other barbarian under the sun.
Looking closer it's very possible. The wording of everything on monk and barbarian says you can use strength and/or dex on checks and throws, also they would be interchangeable, but for the barbarian you get advantage in strength stuff, but if you are swapping dex for strength, I would leave it to the dm but very very very plausible.
Narrative Path: Barbarian 1 > Fighter 1 > Barbarian 5 or 6 > Fighter 2 or 3 > Barbarian X Optimal Path sacrifices your ability to fight unarmed effectively until level 6 or 7, while the Narrative Path delays your Reckless Attack, Rage Feature, Great Weapon Fighting, and Extra Attack by a level, putting you a level behind the curve.
