I still strip mine. Though, I have also taken to making TNT flying contraptions (or flying bed contraptions in the nether) for an alternative. I do a lot of my builds underground, so clearing space out often needs a lot of strip mining. So, short answer: play and have fun and the technique is a viable one
Caving now still comes nowhere near pre 1.17 strip mining efficiency. At least with netherite an efficiency pick clears netherrack instantly and still gives you a sense of progress. Mining deepslate is so damn slow that when combined with the absolutely 0 reward you get from strip mining now the very act of mining in MINEcraft feels like a mistake.
Over all, the most efficient branch mining style, is to leave 3 blocks between each tunnel. I even tested 2 block height, and 3 block height as well. You have a 5% increase in material gain, and roughly a 10% increase in work. So I say that it is worth it personally.
Branch mining is also far more efficient than strip mining. (Just a technicality, I know most people mean the former when they say the latter. Branch mining is what you'd call digging tunnels, strip mining means clearing the entire level)

Strip mining was always a little worse than cave diving. Now that caves are just so much larger, they had to drop the ore distribution by a lot so that it wasnt completely ridiculous. (I still think the redstone and diamond distribution needs to be dropped a little in the Deep-Dark, tbh.) That, of course, made strip mining almost entirely useless.
Strip mining works well, especially after the recent increase in spawn rates. I have equal success with caving and mining, but mining loads me up on building materials as well. Do whichever is more enjoyable to you. Strip mining with a good soundtrack on is my jam. Edit: branch mining, not strip mining.
When I was looking for diamonds in my hardcore world, I burned trough like 3 diamond pickaxes before getting full diamond gear, and then after I had everything, I went mining for deepslate and found like 7 diamond veins. So yeah this is pretty accurate until you aren't actually looking for diamonds anymore
To be exact mining a simple tunnel at diamond level is tunnel mining, adding side tunnels (branches) every 3rd block is branch mining, digging from the surface down in an open pit style is strip mining. For branch mining some people prefer leaving a bigger gap between branches. You miss some of the ores but get more per hour.
Branch mining. Caving seems faster because you spend less time digging through stone, but in my experience the amount of time you spend wandering around lighting things up, dealing with mobs, and outside the y levels you want to be at for the ores you're after makes branch mining actually be the faster option.
