I tried out the recipe function on my Pit Boss this week. Here's what I came up with. First off, rather than outline how to set the recipe here, it's best to use their manual. But basically you set the time you want to run a given temperature for each step. Follow the set up from the instructions from there in the manual.

I have the Pit Boss pro 1600 and I have non stop ash blowing all over the grates and the food. I cant even open and use the sear plate. I am new to pellet grills so I am not sure if this is normal but it doesn't seem that it should be. This happens no matter the temp I am cooking at.
When I am running my PitBoss 850 smoker the fan always runs at full speed all the time. The fan shuts down when I power the unit off (still plugged in), so it appears that the controller does have the ability to turn the fan on and off.
I developed this smoked chili recipe routine for our pit smoker. I think it will do fine on a Pit Boss. Use hotter chilis and/or red pepper for your preferred heat level and cut back on the open smoking time if you want. * use your favorite packaged chili mix (or my mix: 2 tbsp chili powder, 1 tbsp cumin, 1 tsp garlic powder, 1 tsp onion powder)

Tri tip came out great. Very flavorful. Took 2 1/2 hours for a perfect medium. Reverse sear on gas grill worked well too. Will definitely do this cut of meat again. Used Pit Boss whiskey barrel pellets.
